Street Corn Potato Salad

Potato salad has always understood its assignment: arrive cold, feed everyone, and quietly outlast the louder dishes on the table. This version borrows the swagger of Mexican street corn—smoke, lime, chile, and a salty finish—then folds those instincts into the familiar pleasure of a deeply creamy American potato salad.
Yukon Golds are the right foundation. Their yellow flesh carries a natural richness. The dressing lands between lush and bright: mayonnaise for body, sour cream for tang, and lime to keep the whole affair awake. Smoked paprika brings the suggestion of flame even when the corn comes from a cast-iron skillet. Jalapeño gives the salad a clean green heat, while celery and red onion keep the richness from becoming monotonous. Feta stands in for the crumbly, salty finish associated with street corn.
