Candy Corn, The Icon

A small autumn pleasure with an unusually outspoken audience.

Every autumn, candy corn returns like a fashion house that refuses to change its signature look. Same silhouette, same buttery taste, and never-ending controversy. Trends come and go. Candy corn is here to stay, but how it got here had an interesting way of hitting the candy shops. In fact, its original target audience didn’t have anything to do with little spooky costume fun at all.

Circa 1880

The story begins in Philadelphia in the 1880s.  Long before Halloween even began to be celebrated with trick-or-treating and sugary exchanges.  At the time, America was a farming nation, and confectioners leaned into it with tiny sugar turnips, chestnuts, and clover to honor a thriving market. George Renninger of the Wunderle Candy Company (now known as Jelly Belly) is credited with shaping sugar into a kernel of corn.  The sugared treat that we know today was actually not called candy corn at all it was named “Chicken Feed”, presented with an illustrated rooster as a fun way to highlight farming culture.

Early candy makers poured the hot sugary mixture into kernel-shaped impressions in cornstarch, returning for each color. White, orange, yellow: three separate pours for a sweet that might disappear in one bite.

What does candy corn actually taste like?

Think of buttercream with hints of caramel, much more like a butterscotch. Classic versions sit in a sweet, vanilla-and-honey neighborhood, with a creamy chew beneath a slightly firmer surface.

The concentrated sweetness and texture is precisely where opinions polarize down the middle. Devotees find comfort in the soft chew and nostalgic flavor. Other critics find it too sweet, waxy, or simply uninteresting.

Despite the haters and lovers, candy corn’s taste has not changed much since the inception of its creation.  It’s known to be paired well with creamy vanilla drinks, salty snacks, and chocolaty creations.

A Pairing Guide

For a tasting plate, give the sweetness something to play against. These are pairings to try, with crunch, roast, or bitterness providing the contrast:

Salted roasted peanuts bring a nutty, savory bite beside the honeyed sweetness. Try them together rather than taking turns.

Pretzels offer crispness and salt, especially welcome if candy corn's soft texture is what leaves you unconvinced.

Salty buttery popcorn is the perfect balance of salt and sweet with this treasure.

Dark chocolate adds a pleasantly bitter edge. A small piece alongside a kernel lets the sweetness and cocoa meet without either becoming a full dessert production.

For Cheese Pairings:

  • Mimolette: A French aged cheese with deep, toasted, caramel-like undertones that balance the sugary sweetness of candy corn.

  • Brie: A soft cow's milk cheese whose mild, creamy, and buttery profile blends smoothly with the marshmallow notes of candy corn.

  • New York State Yellow Cheddar Or Sharp Cheddar: Can be a great addition to pair with for those Charcuterie boards, A sharp, tangy cheddar that can work well bringing a nice balance.

For something more grown-up, pour a glass of bone-dry sparkling wine. The bubbles and acidity cut through the honeyed sweetness and reset the palate, which means one more handful. Or two. Or steep in vodka for a fun and festive cocktail, the vodka will hold the essence of the candy corn flavor and leave you with a rich color to infuse with your choice of combinations.
