Preparation
1. Cook wheatberries 45–60 minutes until tender-chewy. Drain, cool.
2. Grill or roast zucchini & peppers with oil + salt.
3. Whisk dressing ingredients.
4. Toss wheatberries with veggies, shallot, herbs, and dressing. Serve.
