Shakshuka in a skillet with eggs nestled in tomato sauce.

Preparation

1. Heat oil, sauté onion 3–4 minutes. Add garlic, pepper, cook 2–3 minutes.

2. Stir in spices, toast 1 minute. Add tomatoes, sauce, salt, pepper. Simmer 10–15 minutes.

3. Make wells in sauce, crack eggs in. Cover, cook 5–7 minutes until whites set.

4. Garnish with herbs, serve with flatbread.

2 tbsp olive oil

1 onion, diced

3 garlic cloves, minced

1 banana pepper, diced

1 tsp cumin

1/2 tsp cayenne

1 tsp oregano

1/2 tsp thyme

1/2 tsp basil

1 can (14 oz) diced tomatoes

1/2 cup tomato sauce

Salt & pepper

4–6 eggs

Parsley or cilantro, garnish
