Preparation
1. Preheat oven to 350°F (175°C). Line baking sheet.
2. Toss beets with 2 tbsp olive oil + salt. Roast 20 minutes.
3. Add shallots + 1 tbsp olive oil. Roast 20–25 minutes until tender.
4. Arrange on platter, top with goat cheese, herbs, salt, and pepper.
