Preparation

  1. Preheat your oven to 375°F (190°C).


  2. In a skillet over medium heat, cook the ground beef and onion until browned and fragrant. Season with salt, pepper, garlic powder, cumin, chili flakes, and your choice of seasoning powder.


  3. Remove from heat and stir in cooked rice, green onions, parsley, cilantro, and lime juice until evenly combined


  4. Stuff each bell pepper generously with the beef and rice mixture.


  5. Place peppers in a baking dish and top each with shredded Colby Jack and a generous drizzle of queso cheese sauce.


  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.


  7. Remove from oven and let cool slightly. Garnish with extra sliced green onions, cilantro, and diced red peppers.


  8. Serve with sour cream and tortilla chips for a colorful, festive meal.

  • Vegetarian option: Substitute beef with black beans, lentils, or sautéed mushrooms.

  • 2 tbsp garlic powder

  • 2 green onions, sliced

  • ¼ cup chopped parsley

  • ¼ cup chopped cilantro

  • 1 pinch red chili flakes

  • 2 tsp cumin powder

  • 1 tsp seasoning powder of your choice

  • 1 tsp lime juice

  • 1 cup Colby Jack cheese, shredded

  • 1 cup queso cheese sauce

  • Garnish: extra sliced green onions, cilantro, diced red peppers

  • Optional sides: sour cream and tortilla chips
