Whipped Feta & Roasted Grapes

Preparation

1. Roast the Grapes:

  1. Preheat your oven to 375°F (190°C).

  2. On a parchment-lined baking sheet, toss the grapes with balsamic vinegar, olive oil, salt, and pepper (if using). Spread them in a single layer.

  3. Roast for 15–20 minutes, or until the grapes soften and start to burst, releasing their juices. Remove from the oven and let cool slightly.


2. Make the Whipped Feta:

  1. In a food processor, combine the cream cheese, feta cheese, olive oil, thyme, and black pepper. Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste. Add honey for a hint of sweetness, if desired.


3. Assemble:

  1. Spread the whipped feta onto a serving plate or bowl. Top with the roasted grapes and drizzle any remaining grape juices over the top for extra flavor.


4. Serve:

Serve with crostini, crackers, or sliced baguette. Garnish with additional thyme leaves for a festive touch, if desired.
